Correct me if I'm wrong, but I think the D'ni brought out the firemarbles for their children to play with during First Feast of the Maker celebrations... Here are some delightful D'ni dishes to serve:

Eder Gira Fish en Papillote

- 1 cup couscous
- 1 (2-pound) Eder Gira fish, cleaned, head on*
- 2 teaspoons salt, plus pinch for couscous
- 1/2 teaspoon freshly ground black pepper
- 1 small bunch fresh oregano
- 1 small bunch fresh parsley
- 1 whole lemon, thinly sliced
- 1 cup thinly sliced red onion
- 2 teaspoons minced garlic
- 1 cup halved grape tomatoes
- 1 cup drained and quartered artichoke hearts
- 1/2 cup white wine
- 1 tablespoon butter

You will first need to repair at least one of the fish traps that are lying around the caves. This may prove tricky as you are only allowed to use your toes. Bait trap(s) with glow bugs from Eder Kemo and place in a likely spot. Check trap(s) regularly to see if you've gotten lucky. Once you've caught your fish then proceed to the remaining instructions.

Preheat oven to 425 degrees F.

Cut parchment paper into 15 by 48-inch sheet. Fold in 1/2 and lay on baking/cookie sheet. Unfold and lay snapper diagonally on sheet pan on top of 1 layer of parchment. Salt and pepper fish, inside and out. Place herbs inside cavity of fish along with 1/2 of lemon, and 1/2 of red onion.

Arrange couscous next to fish on all sides. Put garlic, and remaining lemon and red onion on fish and lay tomatoes and artichoke hearts around outside of couscous, creating somewhat of a wall. Pour wine over fish and dot with butter. Fold over edges of parchment paper, stapling if necessary, to create an almost airtight seal.

Bake in oven for 30 minutes. Carefully open and serve (beware of bones in the fish).

*NOTE: If you don't have traps, you may substitute a whole red fish from the market.

Shroomie Cakes

Prep Time: 25 minutes
Cook Time: 12 minutes
Yield: 4 servings

- 1/4 cup mayonnaise
- 1/4 cup onion, minced
- 2 eggs, lightly beaten
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 pound lump shroomie*
- 1 cup soda crackers, finely crushed
- 2 tablespoons unsalted butter
- 1/4 cup vegetable oil
- Lemon wedges

In a large bowl, combine the mayonnaise, onion, eggs, Worcestershire sauce, dry mustard, salt and cayenne. Fold in the shroomie and ¼ cup of the cracker crumbs. Shape the mixture into 16 cakes about 1-inch thick. Coat the shroomie cakes with the remaining cracker crumbs and transfer to a baking sheet lined with waxed paper. The shroomie cakes can be refrigerated overnight at this point, if needed.

In a large skillet, melt 1 tablespoon of the butter in 2 tablespoons of the oil. When the foam subsides, add half the shroomie cakes and cook over moderate heat until golden and crisp, 2 to 3 minutes per side. Drain the shroomie cakes on paper towels, then keep warm in a low oven. Repeat with the 1 remaining tablespoon of butter and 2 tablespoons of oil and cook the remaining shroomie cakes. Serve with lemon wedges.

* Note: If shroomie is not available, you may substitute lump crab meat from the market.
